WHAT ARE THE BEST APPLES
FOR PIES AND APPLESAUCE?
In my opinion, the best apples for pies and applesauce are the one that you just picked.
Everyone’s taste is different from extremely sweet to extremely tart. Some people like to see slices, others do not.
If you use just sweet apples (gala, gold delicious) add a little lemon for zip and cut back on the sugar or just put the sugar on the top crust.
If you use just tart apples (McIntosh, Granny Smith) you will be using a lot of sugar.
Use a mixture, the more the better.
Personally, I like to use 1/3 McIntosh (they cook down fast), 2/3 Red Delicious (for nice firm slices) and put the sugar on the top crust.
Many of our customers have used the following varieties with great results:
Golden Delicious - Sweet, Braeburn - Sweet, Jonagold _ Sweet, Granny Smith - Tart, Empire - Tart and Cortland - Tart.
